These cartographic isolines were generated using ESRI's raster functions to apply an adaptive smoothing filter. This algorithm allows for the level of smoothing to be data-driven, varying based on terrain slope. Flatter areas are smoothed more than steeper areas so that details are preserved while artifacts are removed.
